Satisfying Cauliflower Fried Rice with Curried Shrimp

  • 1 lb. large shrimp, peeled and deveined
  • Kosher salt
  • 2 tsp. curry powder
  • 5 tablespoons vegetable oil
  • 1 chopped onion
  • 3 scallions, sliced thin (separate green and white parts)
  • 1/4 cup sliced almonds
  • 1 tablespoon minced fresh ginger
  • 3 cloves garlic, minced
  • 2 cups frozen riced cauliflower, thawed
  • Sliced Persian cucumber, mango chutney, plain yogurt, and lime wedges for serving

Cooking Instructions:

Cauliflower Fried Rice with Curried Shrimp

Step 1: Searing the Shrimp Lightly season the shrimp with salt and toss with 1 tsp of curry powder. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Cook the shrimp until the edges are browned, about 1-2 minutes on each side. Plate the shrimp.

Step 2: Preparing the Fried Rice Add 3 tablespoons of vegetable oil to the skillet. Sauté onions and the white parts of scallions until soft and lightly browned (about 3 minutes). Stir in almonds, ginger, garlic, and the remaining curry powder. Cook for an additional minute until the almonds are toasted. Add white rice, riced cauliflower, and 1/2 tsp salt. Break up any clumps while tossing. Toast the almonds for about 3 minutes. Incorporate the cooked shrimp and toss until warmed through (approximately 1 minute). Season with salt.
