Chicken Stir-Fry, Quick and Easy

Chicken stir-fry is a quick and easy meal that’s perfect for busy weeknights. This recipe is loaded with tender pieces of chicken, crisp vegetables, and a flavorful sauce. This particular stir-fry recipe calls for chicken, bell peppers, cauliflower, pea pods, and onions, but feel free to get creative and add any other veggies you have on hand. The stir-fry sauce is made with a combination of soy sauce, honey, brown sugar, and wine, which gives it a delicious savory, and slightly sweet flavor. Chicken Stir-Fry Ingredients

Feeds 6-8 people

You’ll need:

  • 2 pounds boneless, skinless chicken breast, cut into bitesize pieces
  • 2 Tbls olive oil
  • 1 1/2 carrots, peeled and sliced in 1/2-inch pieces
  • 1/2 head of broccoli buds, separate buds into bite-size pieces
  • 1/4 head of cauliflower buds, separate buds into bite-size pieces
  • 3/4 pound pea pods or green beans
  • 1 green pepper, sliced into 2-inch strips
  • 1/2 red or yellow pepper, sliced into 2-inch strips
  • 1/4 onion, sliced into thin strips
  • 4 ounces mushrooms, sliced
  • 2 Tbls cornstarch
  • 2 Tbls water
  • 1 Tbls honey
  • 1/2 cup chicken stock
  • 1 Tbls brown sugar
  • 2 Tbls white wine
  • 2 Tbls low sodium soy sauce

Process:

  1. Wash, dry, and prepare vegetables
  2. Rinse and pat dry the chicken, then cut into bitesize pieces
  3. In a wok or saucepan, saute’ the chicken in 1 Tbls olive oil. 3-5 minutes
  4. Add the second Tbls of olive oil.
  5. Add the vegetables, stirring occasionally, just until crisp and tender
  6. Let the vegetables cook for 2 minutes.
  7. In a separate pan, combine honey, chicken stock, brown sugar, white wine, and soy sauce. Simmer over medium heat. Mix the cornstarch with the water, then add to the simmering sauce.
  8. Add the sauce to the chicken and vegetables. Simmer and stir for 2 minutes.

Serve with rice, noodles, or cauliflower rice.

With a dish such as this, heavy with strong vegetables, look for a white with a similar type of green or herbal flavor, such as a Sauvignon Blanc.
