Chili – Party Style

Welcome to my Super Bowl Party Chili and Wine Pairing… This chili is great for any party or even your everyday lunch or dinner. So delicious and healthy too.

I found the recipe on Pinterest and then made a few changes to make it Keto, Paleo, WW, and Whole 30 compliant. While it does not contain beans, you can always add them in. I used the Instant Pot slow cooking setting, but any crock pot or low heat on the stove can work just as well.

For my wine pairing, I selected a couple of recent Wine of the Month Club wines:

Antoniou Cabernet Sauvignon (2018), Napa, CA. For our tasting, we started by pairing the wine with some dark chocolate. This was our first experience with fine wine along with chocolate. OMG!!! I may make this a habit. If you have never tried this, do it NOW!!! The experience is amazing. The wine becomes smoother and the taste of the chocolate intensifies…HEAVEN. Later we enjoyed this Cabernet Sauvignon with our chili and the goodies brought by others. I found it paired well with almost everything, but we agreed the rich aroma and taste were best with the chili.

Discoveries Sauvignon Blanc (2019), Napa, CA. Although only a few guests remained at the end of the game, we did enjoy this wine with the cheesecake from the Cheesecake Factory. The wine flavors of citrus and gooseberry made this varietal a wonderful companion to the smooth richness of the cheesecake. I particularly loved this light wine as a close to our evening. Finally, my husband and I finished off the bottle as we cleaned up at the end of the day. Perfect!!!

CHILE RECIPE

Paleo, Keto, Whole 30 (do not add dairy items), and WW (7 pts)

Ingredients:

  • 2 pounds of ground lean beef (preferably organic)
  • 1 1/2 Tbsp olive oil
  • 3 cloves of garlic, minced
  • 1 green pepper chopped
  • 1 medium onion, chopped
  • 4 oz tomato paste (no sugar for Whole 30)
  • 1 (15 oz) can diced tomatoes (no sugar for Whole 30)
  • 1 (4.5 oz) can chopped green chiles
  • 2 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1 Tbsp dried oregano
  • 1/2 cup beef broth (preferably organic)
  • salt, black pepper to taste

For garnish (optional):

  • Sour Cream (not for Whole 30)
  • Shredded cheddar cheese (not for Whole 30)
  • Sliced jalapeno

Instructions:

  1. Start by heating the olive oil and then adding the ground beef: if using the Instant Pot, start with the Saute function. Otherwise, you will use a frying pan to cook the ground beef until browned. Break up the meat as it cooks.
  2. If using the Instant Pot, change the setting to Slow Cook. Otherwise, add the cooked ground beef to the Crock Pot or stove top pot.
  3. Add the remaining ingredients and mix them.
  4. Cover and slow cook for 4-6 hours.
  5. If you prefer your chili spicer, you may add a little chili flakes as well.

Serve:

Ladle into your serving bowls. Then, have the garnishes available for each person to add as they desire.
