Egg and Sausage Casserole

Recipe: Ingredients:

  • 3/4 lb. ground fresh sausage
  • 1 Tbsp butter
  • 4 green onions, chopped
  • 1/2 lb. fresh mushrooms, sliced
  • 10 eggs, beaten
  • 16 oz. low-fat cottage cheese
  • 1 lb. Jack cheese, shredded
  • 8 oz canned diced green chile peppers, drained
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup butter, melted

Cooking Instructions:

  1. Brown the sausage over medium heat until cooked through. Drain and set aside.
  2. In a skillet, melt butter and sauté green onions and mushrooms until tender.
  3. In a large mixing bowl, combine beaten eggs, cottage cheese, Jack cheese, and green chile peppers. Mix in the cooked sausage, green onions, and mushrooms. Cover and refrigerate overnight.
  4. The next morning, preheat the oven to 350°F.
  5. Remove the egg mixture from the refrigerator and let it sit for 30 minutes.
  6. In a separate bowl, mix flour, baking powder, salt, and melted butter. Stir into the egg mixture until well combined.
  7. Pour the mixture into a lightly greased 9×13 baking dish.
  8. Bake for 40-50 minutes, or until the eggs are set and lightly browned.
  9. Allow the casserole to cool for 10 minutes before serving.
