Here’s How To Create This Culinary Delight:

  • 1 pound medium shrimp, peeled and deveined
  • 8 ounces pasta (fusilli or penne work well)
  • 1 cup halved cherry tomatoes
  • 1/2 thinly sliced red onion
  • 4 stalks diced celery
  • 1 diced bell pepper (choose your favorite color)
  • 1/4 cup sliced black olives
  • 1 chopped avocado
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 cloves minced garlic
  • Salt and pepper to taste
  • Grated Parmesan cheese & Lemon Wedges for garnish

Dressing Ingredients:

  • 1/4 cup mayonnaise (Blue Plate)
  • 1 tablespoon plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Sweet Pickle Relish
  • 1 tablespoon Dill Pickle Relish
  • 1 tablespoon honey
  • 1 clove minced garlic
  • 2 tablespoons fresh lemon juice
  • Salt, pepper, and Cajun seasoning to taste

Instructions For the Shrimp Pasta Salad:

  1. Cook the pasta according to package instructions until al dente. Drain, rinse under cold water, and set aside.
  2. Prepare the shrimp: Season with salt, pepper, and Cajun seasoning. Cook in olive oil over medium heat for 2-3 minutes per side until pink and opaque. Remove from heat and let cool.
  3. Make the dressing: Whisk together mayonnaise, Greek yogurt, Dijon mustard, honey, minced garlic, lemon juice, salt, pepper, and a dash of Cajun seasoning until well combined.
  4. Assemble the salad: In a large bowl, combine pasta, cooked shrimp, cherry tomatoes, relishes, red onion, peppers, parsley, and avocado. Gently toss to mix.
  5. Add the dressing: Pour the prepared dressing over the salad mixture and stir until evenly coated.
  6. Serve: Arrange mixed salad greens on a platter or individual plates. Spoon the shrimp pasta salad over the greens, and garnish with lemon wedges and additional parsley if desired.
  7. Enjoy: Serve immediately, accompanied by crusty bread or toasted baguette slices. This dish pairs beautifully with a glass of chilled white wine or a refreshing mimosa.

Wine Pairing Recommendations:

  • Sauvignon Blanc: Its crisp acidity and citrusy notes complement the freshness of the shrimp and dressing.
  • Pinot Grigio: Delicate fruit flavors and balanced acidity make it a perfect match for this dish.
  • Chardonnay: Opt for unoaked or lightly oaked Chardonnay to contrast with the creamy dressing and sweetness of the shrimp.
  • Rosé: Its crisp acidity and fruity notes make it a versatile option that complements the salad’s vibrant flavors.
